Fish pie

  1. Haddock, onions, milk, bay leaf and peppercorns in saucepan.
  2. Bring slowly to the boil and poach fish for 5 mins.
  3. Remove fish from liquid.
  4. Melt butter in a seperate saucepan and whisk in the flour.
  5. Strain milk from fish and gradually stir into the roux.
  6. Bring to a simmer and cook for 5 minutes stirring all the time.
  7. Season.
  8. Break fish into large chunks and place in shallow oven dish.
  9. Add hardboiled eggs, parsley and peas.
  10. Pour the sauce on top.
  11. Scatter over breadcrumds and dot with butter.
  12. Bake in oven at 180 for 30/40 minutes until brown and bubbling.
