Bulgur & Black Bean Summer Fruit Salad

  1. Bring water to a boil; add bulgur, cinnamon and salt.
  2. Stir.
  3. Let simmer 10-15 minute (until water is absorbed and bulgur is tender).
  4. Move from heat.
  5. Add beans, dressing, chopped mint leaves and almonds.
  6. Mix well.
  7. Gently stir in blueberries, chopped mango and strawberries.
  8. Cover and refrigerate 1 hour or more.
