Cheesy Shrimp and Rice
- 1 Tbsp. oil
- 1 lb. (450 g) frozen uncooked cleaned large shrimp, thawed
- 2 cups 25%-less-sodium chicken broth
- 1/2 cup Philadelphia Herb & Garlic Cream Cheese Product
- 1-1/3 cups instant white rice, uncooked
- 2 cups frozen broccoli florets, thawed
- Heat oil in large skillet on medium-high heat.
- Add shrimp; cook 3 min.
- on each side or until shrimp turn pink.
- Remove shrimp from skillet; cover to keep warm.
- Add broth and cream cheese product to skillet; cook and stir until 3 to 5 min.
- or until cream cheese is melted and sauce is well blended.
- Stir in rice; cover.
- Cook on low heat 5 min.
- Stir in broccoli and shrimp; cook, covered, 5 min.
- or until rice is tender, liquid is absorbed and broccoli is heated through.
