Bluefish Blackened Blues Recipe

  2. Heat up your cast iron skillet (must be very warm).

  4. Coat the outside of your filets with butter or possibly margarine.
  5. Then sprinkle with or possibly roll in a mix of paprika, lemon pepper, black pepper, red pepper and thyme.

  7. Wear your gas mask (or possibly open all your windows!
  8. ).
  9. 4.
  10. Cook both sides, obviously; your filets will cook fast, so your fish stays moist.
  11. 5.
  12. Serve with lots of cool beer (especially if you put on a lot of red pepper!)
  13. Author's Notes: There is a BIG difference between fresh bluefish and not-so-fresh bluefish.
  14. Best bet is to catch'm and eat'm the same day.
  15. Also, the small ones are a bit 'sweeter' than the big ones.
