Shrimp Alfredo
- 2 Tablespoons Butter
- 1 clove (Large) Garlic, Minced
- 1/4 cups Red Onion, Finely Diced
- 1/2 cups White Wine
- 2 Tablespoons Flour
- 3 cups Half-and-Half Cream
- 1 cup Parmesan, Grated
- Salt To Taste
- 1 pound Shrimp, Cooked In Crab Boil Spices
- 10 whole Tagliatelle Nests
- Parsley, To Garnish
- Freshly Ground Pepper
- Heat a large pot of salted water for the pasta.
- Melt butter in a fry pan and saute garlic and red onion.
- Add white wine and let it reduce to less than a 1/4 cup.
- Add flour to the onion mixture and stir for 1 minute.
- Slowly with a wooden spoon or whisk, add the cream.
- Heat to simmer and reduce slightly.
- Add the cheese and salt to taste.
- Cook pasta according to the package instructions.
- Ladle sauce over the pasta nests (if they come apart while cooking, just re-form then into little nests again), top with the cooked shrimp.
- Garnish with parsley and freshly ground black pepper.
