Cool-as-a-Cucumber Soup

  1. Process first 6 ingredients in blender or processor until smooth.
  2. Transfer mixture to bowl.
  3. Refrigerate.
  4. (Can be prepared up to 4 hours ahead.)
  5. Ladle soup into bowls.
  6. Garnish soup with yellow bell pepper, tomato and cilantro sprigs and serve.
