Fish Rosettes
- 1 12 lbs flounder fillets, cut in 12 strips
- 12 lb salmon fillet, cut in 12 cubes
- 3 onions, sliced
- 1 teaspoon salt
- 14 teaspoon paprika
- 14 teaspoon black pepper
- 1 (8 ounce) can tomato sauce
- 2 tablespoons butter
- Preheat oven to 350F.
- Wrap one strip of flounder around each cube of salmon to form rosettes; secure with toothpicks.
- Grease a baking dish with butter or non-stick spray.
- Arrange onions on bottom of dish; place rosettes on top of onions.
- Combine salt, paprika and pepper in small bowl; sprinkle over fish and onions.
- Add tomato sauce to baking dish.
- Dot fish with butter.
- Bake 45 min or until fish flakes with a fork; baste with tomato sauce every 15 min while baking.
