Vegetarian Stir-Fry with Spicy Peanut Sauce
- 1/4 cup Kraft Asian Sesame Dressing
- 3 Tbsp. hot water
- 2 Tbsp. Kraft Smooth Peanut Butter
- 1 Tbsp. reduced-sodium soy sauce
- 2 Tbsp. oil, divided
- 1 lb. (450 g) extra-firm tofu, well drained, patted dry and cut into 1-inch cubes
- 2 green onions, cut into 1-inch lengths
- 4 cloves garlic, minced
- 1 Tbsp. minced gingerroot
- 1/4 tsp. crushed red pepper
- 1 each red and yellow sweet pepper, cut into 1-inch pieces
- Whisk together first 4 ingredients until blended.
- Heat 1 Tbsp.
- oil in wok or large skillet on high heat.
- Add tofu; cook and stir on medium-high heat 5 to 6 min.
- or until golden brown.
- Transfer to plate.
- Heat remaining oil in wok.
- Add onions, garlic, ginger and crushed pepper; stir.
- Cook and stir 1 min.
- Add sweet peppers; cook and stir 4 to 5 min.
- or until crisp-tender.
- Return tofu to wok along with the dressing mixture; stir.
- Bring to boil; cook and stir 2 to 3 min.
- or until thickened.
