Meg's Pasta Sauce Recipe
- 1 jar plain spaghetti sauce
- 1 chicken breast, cooked
- 1/4 pound shrimp, cooked
- 1 clove garlic, crushed
- 2 tbsp. tomato paste
- 1/2 teaspoon dry oregano
- 1/4 c. parsley, minced
- 1/2 lg. red pepper, minced
- 1 med. onion, minced
- 4 lg. tomatoes, minced
- 3 tbsp. fresh basil, minced (or possibly 1 teaspoon dry basil)
- Salt
- Fresh grnd pepper
- Throw spaghetti sauce into a pot and heat it.
- Add in garlic, tomato paste, oregano, onion, tomatoes, salt and pepper.
- Shred the chicken, cut up the shrimp and add in it along with red pepper, parsley and basil to the sauce.
- Simmer till onions are tender.
- Serve over your favorite pasta (linguine is my favorite) and top with grated Mozzarella cheese.
- Note: Make sure the chicken and shrimp are slightly underdone when you add in them to the sauce.
