Bow Tie Pasta with Caramelized Cherry Tomatoes and Sausage

  1. Preheat a large saute pan with oil over medium low heat.
  2. Slice all of the cherry tomatoes in half and put them into the saute pan.
  3. Sprinkle with salt and pepper.
  4. Cook over medium low heat for approximately 20 minutes.
  5. The tomatoes will darken in color and become even more sweet than before.
  6. While the cherry tomatoes are cooking, in a separate pan brown sausage over medium heat breaking into bite size pieces while cooking.
  7. Once the sausage is browned, remove it from the heat and set aside.
  8. Into the pan of tomatoes, still over medium low heat, add diced onions and garlic and cook for an additional 5 minutes until the onion starts to soften.
  9. Add basil, can of diced tomatoes and the sausage.
  10. Add salt, pepper, and chili flakes to taste.
  11. Cook pasta according to package instructions.
  12. Save 1-2 cups of the starchy pasta water before draining the rest of the water off of the pasta.
  13. Add drained (NOT RINSED) pasta into the tomato mixture.
  14. Add some of the reserved pasta water if needed to fully coat the pasta.
  15. Add half of the Parmesan cheese and mix well.
  16. Garnish with the remaining Parmesan cheese and basil and ENJOY!
