Bow Tie Pasta with Caramelized Cherry Tomatoes and Sausage
- 2 Tablespoons Olive Oil
- 1 pint Cherry Tomatoes
- 2 whole Spicy Italian Sausages, Casings Removed
- 1/2 cups Small Diced Onions
- 2 cloves Garlic, Minced Or Diced
- 6 whole Basil Leaves, Chopped, Plus More For Garnish
- 1 can Diced Tomatoes, 14 Oz
- 1 pinch Dried Chili Flakes
- 3/4 pounds Bow Tie Pasta
- 1/2 cups Fresh Grated Parmesan Cheese Divided
- Salt And Pepper, to taste
- Preheat a large saute pan with oil over medium low heat.
- Slice all of the cherry tomatoes in half and put them into the saute pan.
- Sprinkle with salt and pepper.
- Cook over medium low heat for approximately 20 minutes.
- The tomatoes will darken in color and become even more sweet than before.
- While the cherry tomatoes are cooking, in a separate pan brown sausage over medium heat breaking into bite size pieces while cooking.
- Once the sausage is browned, remove it from the heat and set aside.
- Into the pan of tomatoes, still over medium low heat, add diced onions and garlic and cook for an additional 5 minutes until the onion starts to soften.
- Add basil, can of diced tomatoes and the sausage.
- Add salt, pepper, and chili flakes to taste.
- Cook pasta according to package instructions.
- Save 1-2 cups of the starchy pasta water before draining the rest of the water off of the pasta.
- Add drained (NOT RINSED) pasta into the tomato mixture.
- Add some of the reserved pasta water if needed to fully coat the pasta.
- Add half of the Parmesan cheese and mix well.
- Garnish with the remaining Parmesan cheese and basil and ENJOY!
