lemon rosemary chicken Recipe
- 1.5 lbs boneless skinless chicken thighs
- 2 tbs poultry seasoning
- 1 medium onion
- 3 cloves garlic
- 1/2 cup lemon juice
- 4 stalks fresh rosemary
- 2 tbs extra virgin olive oil
- 1/2 tsp salt
- pepper to taste
- Cut the chicken into bite-sized chunks
- Season the chicken with the poultry seasoning
- Soak the chicken in the lemon juice for about 15 minutes
- Mash and chop the garlic (medium dice)
- Chop the onion (medium dice)
- Heat a large saute pan over medium heat
- Add the oil to the pan
- Add the onion, garlic, and salt to the pan, and sweat the onion until translucent, about 5 minutes
- Add the chicken and the lemon juice, and increase the heat to medium-high until the lemon juice boils, then reduce to a simmer (medium low) and add half the rosemary
- Simmer for about 15 minutes, until the chicken is mostly cooked through.
- Add the remaining rosemary and cook for another 5 minutes
- Serve over rice or pasta
