Spicy Watermelon Salsa

  1. Add the fruit, cilantro and onion to a large bowl.
  2. Add the lime juice, olive oil and salt, and gently toss to coat all the ingredients.
  3. Cover and refrigerate for about 1 hour to allow the flavors to blend.
  4. Serve with grilled chicken or tuna, or with chips.
  5. Note: If you do not have habanero-infused extra virgin olive oil for this recipe, simply use standard extra virgin olive oil, and add your favorite spicy pepper (about 1/4 cup, diced) to the mix.
