Mediterranean Lamb Burgers
- 1 12 lbs ground lamb
- 3 garlic cloves, minced
- 1 tablespoon minced of fresh mint
- 1 tablespoon miced fresh parsley
- 12 teaspoon ground cumin
- 12 teaspoon ground coriander
- 14 teaspoon ground black pepper
- 14 teaspoon salt
- 2 cupes Greek yogurt
- 23 cup peeled seeded, and diced cucumber
- 14 cup chopped pistachios
- 1 tablespoon miched fresh cilantro
- 12 teaspoon salt
- 13 teaspoon ground red pepper
- In a large bowl, combine ground lamb, garlic, mint, parsley, cumin, coriander, pepper, and salt.
- Shape mixture into 5 patties.
- Preheat grill to medium-high heat (350-400).
- Spray grill with nonstick nonflammable cooking spray.
- Gril, covered wtih a grill lid, for 7-8 minutes on each side, or until an instant0read thermometer reads 160 degrees when inserted in the center.
- In small bowl, combine yogurt, cucumber, pistachios, cilantro, salt, and pepper.
- Spread desired amount of Cucumber yogurt sauce over pita rounds.
- Top each with lamb patty.
- Garnish with cucumber, pistashios, and fresh mint if desired.
