Banana Bread (Gluten-Free)
- 1 34 cups Bob's Red Mill gluten-free all-purpose baking flour
- 2 teaspoons baking powder
- 14 teaspoon baking soda
- 1 12 teaspoons xanthan gum
- 12 teaspoon salt
- 23 cup white sugar
- 13 cup butter, softened
- 2 eggs or 12 cup Egg Beaters egg substitute
- 1 cup mashed banana
- 12 cup chopped maple walnuts or 12 cup pecans

- Grease an 8x4 or 9x5 inch loaf pan.
- Preheat oven to 350 degrees F (175 degrees C).

- In a large mixing bowl, sift together flour, baking powder, baking soda, salt, and sugar.
- Add butter, eggs, nuts, and mashed banana.
- Beat until well blended.

- Pour batter into prepared pan and bake about 1 hour, or until a toothpick inserted in the center of the loaf comes out clean.
