Chicken Adobo Recipe
- 1 whole chicken, cut up
- 1/4 c. vinegar (any kind)
- 1 teaspoon peppercorn (whole)
- 1 teaspoon grnd black pepper
- 3-4 tbsp. soy sauce
- 2 whole bay leaves
- 1/2 head garlic, peeled & crushed
- 1/4 c. chicken livers
- Wash chicken pcs and drain in a colander for 5 min.
- Place chicken pcs in a skillet with all remaining ingredients and cover.
- Cook for 40 min over medium fire.
- Lower heat and simmer for 10 to 15 min more over low fire.
- Remove chicken livers from skillet, mash fine and then pour back over chicken.
- Let boil again for 3 min.
- Serve warm with steamed or possibly fried rice or possibly warm rolls.
