Chicken in Orange Sauce
- 1 (4 lb) fryer, sectioned
- 4 tablespoons butter
- 2 tablespoons flour
- 18 teaspoon cinnamon
- 14 teaspoon salt
- 1 12 cups orange juice
- 14 teaspoon Tabasco sauce
- 12 cup slivered almonds
- 12 cup raisins
- 1 orange
- 1 dash ground cloves
- Sprinkle chicken pieces lightly with salt and brown in butter.
- Remove chicken, add flour, 1/4 t salt, cinnamon and cloves to the drippings.
- Stir to a smooth paste and add orange juice and Tabasco.
- Cook until thick.
- Add chicken, almonds and raisins.
- Cover and simmer 45 minutes until tender.
- Add orange sections for last five minutes.
- Serve with hot rice.
