Poached Chayotes with Chocolate Sauce

  1. Cook water and sugar in 4-qt.
  2. saucepan on medium-high heat until sugar is completely dissolved, stirring frequently.
  3. Reduce heat to medium-low.
  4. Add chayotes; partially cover saucepan with lid.
  5. Simmer 30 min.
  6. or until chayotes are tender, stirring gently every 10 min.
  7. Remove chayotes from liquid; discard liquid.
  8. Cut chayotes lengthwise in half.
  9. Place chocolate in small microwaveable bowl.
  10. Add milk.
  11. Microwave on HIGH 2 min., stirring after 1 min.
  12. Stir until chocolate is completely melted.
  13. Spoon 1/4 cup of the pineapple onto each of eight plates; sprinkle each with about 1 tsp.
  14. coconut.
  15. Top with chayote halves; drizzle evenly with chocolate sauce.
  16. Sprinkle with pecans.
