My Excellent Green Chili
- 8 cups chicken broth
- 1 large onion, chopped
- 4 chicken breasts, cooked and diced
- 3 (7 ounce) cans whole green chilies, chopped
- 3 jalapenos, seeded and chopped
- 6 garlic cloves, minced
- 2 tablespoons dried cilantro or 12 cup fresh cilantro, chopped
- 12 teaspoon ground cumin
- 3 (14 ounce) cans white hominy, drained
- 2 (1 1/4 ounce) packagesdry chicken gravy mix
- 3 cups sour cream
- 1 large tomatoes, diced
- In a large stock pot, bring chicken broth to a slow boil.
- Add onion, chicken, chilies, jalapenos, garlic, cilantro and cumin.
- Cover and let simmer, maintaining boil for at least 1 hour or more.
- The longer the better the flavors mix.
- 20 minutes before serving, uncover, add hominy and stir in gravy mix to thicken.
- After removing from heat, add sour cream stirring until well blended.
- Garnish each bowl with fresh tomato and serve.
- Yummy!
- Grilled chicken makes this dish taste even better.
