Miss Mimmy's Old Dutch Pot (fried cabbage)

  1. fry bacon (preferably in a cast iron pan)
  2. while bacon is frying cut up cabbage into 1" slices.
  3. The core can be used for coleslaw or thrown away.
  4. cut potatoes into pieces.
  5. salt and pepper potatoes.
  6. add minced onion to potatoes and also mix with potatoes.
  7. once bacon is done, remove from skillet.
  8. put cabbage in and stir to make sure cabbage is covered with bacon drippings.
  9. wilt cabbage.
  10. should be on Med ...
  11. salt and light peppering of the cabbage.
  12. lay potatoes on top of cabbage.
  13. pour chicken broth over the cabbage mixture.
  14. cabbage makes a lot if liquid so 1/4 broth is plenty.
  15. turn down to Med/ low....
  16. cut up Sausage into bite size pieces and lay on top of potatoes ..my husband is spoiled cause you can lay large pieces of sausage on top!!

  18. poke a whole into each Sausage link with a long fork.this is not necessary if you cut in bite size pieces...cover....
  19. let cook until potatoes are done.
  20. to check this poke potatoes with a fork.
