Quick Supper Quesadillas

  1. Heat 10-inch skillet or pancake griddle on medium low heat for 3-4 minutes.
  2. Place 1 tortilla in ungreased pan.
  3. Evenly sprinkle with half the cheese.
  4. Add meat, if desired.
  5. Cover with a second tortilla.
  6. Heat until bottom becomes lightly browned, 2-3 minutes.
  7. Carefully turn with a spatula and brown the second side.
  8. The melted cheese should hold the two sides together.
  9. Repeat with the next two tortillas.
  10. Let cool about 1-2 minutes then slice into wedges & serve.
  11. Serve with you choice of salsa, sour cream, and guacamole.
