Sig's Dippy Tomato and Goats Cheese Spread
- 2 pinch each or to taste smoked paprika, dried parsley, basil, tarragon and dill
- 1 ripe salad tomato , please remove the seeds and all the juice and the core inside
- 200 grams philladelphia or other cream cheese
- 150 grams soft brie like goats cheese , I use Chavroux, La Buche , or use a mild Brie or Camenbert if you can't get a Brie like goats cheese
- Prepare your tomato
- Then add half of all the herbs, the cheeses and the tomato into a bowl and puree
- When it is smooth , stir in the other herbs and set aside in fridge for an hour or so if you want to use this as a sandwich spread or use straight away as a dip for vegetables, as a topping for baked potato or cauliflower and such and also use in pasta as a cheese sauce in its own right or with added prawns or baked .
- Use other herbs if you prefer, but I felt this combination complimented the hint of tomato and did not overpower it .
