Black Bean, Edamame and Wheat Berry Salad

  1. Combine water and wheat berries in a med.
  2. saucepan, bring to a boil.
  3. Reduce heat and simmer 55 minutes, until wheat berries are tender.Drain in a strainer,run water over wheat berries to cool quickly.
  4. Combine wheat berries with the reamining ingreadients in a med.
  5. bowl.
  6. Toss to coat.
  7. Serve immediatly, or keep refridgerated 8 hours in advance.
