Crash Potatos
- 8 small red potatoes
- 1/4 cup olive oil
- 2 clove garlic, minced
- 1/2 tsp cajun seasoning
- 1/4 tsp black peppet
- 1 pinch salt
- 2 tbsp grated parmesan cheese
- 1 FOR DIP
- 1 tbsp chopped chives
- 1/2 cup sour cream
- Cover potatos with salted water bring to a boil and cook until tender then cool.
- This can be done a day or two in advance, keep chilled.
- Preheat oven to 460.
- Line a baking sheet with parchment paper or foil and spray with non stick spray
- In a bowl combine olive oil with garlic, seasonings and cheese, whisk to combine
- Place potatos on prepared baking pan, gently, using the palm of your hand crush potatoes to about 1/4 inche thick trying to keep potato intact, if it breaks apart just push it together
- Brush each potato top generously with olive oil mixture.
- Bake 30 to 45 minutes depending on potato size until golden and crispy.
- Mix the sour cream with the chives and serve with hot potatos
- This potato dish is good as a side dish but makes a good appetizer as well!
