Flora's Traditional Kentucky Beer Cheese

  1. Open bottle of beer and allow to sit out on counter for a hr or longer, until bubbles are gone.
  2. Grate your cheese and put in a bowl with all the ingredients except the beer.
  3. Pour the beer onto the cheese mixture and work in really good (if you have a large food processer it would work really well for this).
  4. The cheese mixture will be kinda loose..cover with foil and let sit in fridge for 24 to 48 hrs.
  5. In Kentucky we serve this cheese as a dip with crackers.
  6. It is a staple at the derby and would be a great addition to any derby partys.
  7. I make it and serve in little plastic containers and hand out as christmas presents for co-workers.
