Flora's Traditional Kentucky Beer Cheese
- 16 oz Sharp Chedder Cheese
- 2 clove of garlic, minced
- 1/4 medium onion, minced finely
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/4 tsp cayenne pepper
- 3 dash of Whorchestire sauce
- 3 dash of franks red hot
- 3/4 bottle of beer, flat
- Open bottle of beer and allow to sit out on counter for a hr or longer, until bubbles are gone.
- Grate your cheese and put in a bowl with all the ingredients except the beer.
- Pour the beer onto the cheese mixture and work in really good (if you have a large food processer it would work really well for this).
- The cheese mixture will be kinda loose..cover with foil and let sit in fridge for 24 to 48 hrs.
- In Kentucky we serve this cheese as a dip with crackers.
- It is a staple at the derby and would be a great addition to any derby partys.
- I make it and serve in little plastic containers and hand out as christmas presents for co-workers.
