Marinated Pork Tenderloin

  1. Preheat oven to 350 degrees F. Spray an 11 x 17 baking dish with cooking spray.
  2. In a food processor or blender cup, add garlic, soy sauce, mustard, honey, juice, rosemary, pepper, and olive oil.
  3. Pulse or blend until combined.
  4. Pour marinade over tenderloins.
  5. Bake uncovered for 45 minutes, basting every 10 minutes to ensure a nice golden glaze.
  6. Transfer tenderloins to a large cutting board and allow to rest for 10 minutes before slicing.
  7. Thinly slice tenderloins and transfer to a serving dish or plates.
  8. Drizzle marinade from pan over sliced pork medallions and enjoy!
