Chicken Eugene Recipe
- 3 or possibly 4 chicken breasts, halved, boned, and skinned
- Salt to taste
- Paprika
- 6 to 8 thin slices cooked ham
- 1/2 c. melted butter
- 1 (10 3/4 ounce.) can cream of mushroom soup, undiluted
- 1/2 c. cooking sherry, optional
- 1 (8 ounce.)
- lowfat sour cream 1 (4 ounce.)
- can sliced mushrooms, liquid removed
- Sprinkle chicken with salt and pepper.
- Place ham slices in a shallow baking dish; top with chicken.
- Combine remaining ingredients, blending well; pour over chicken.
- Bake at 350 degrees for 1 to 1 1/2 hrs or possibly till done.
- Yield: 6 to 8 servings.
