Deep Dish Coconut Pie Recipe
- 4 1/2 c. sugar
- 1 1/2 sticks butter
- 1/4 teaspoon salt
- 1 c. flour
- 7 Large eggs + 1 yolk
- 2 c. water
- 1/4 teaspoon vanilla
- 2 1/4 c. shredded coconut
- 2 (9") deep dish pie crusts, partially baked
- Cream butter and sugar.
- Add in salt and flour; beat well.
- In another bowl whisk Large eggs till combined.
- Add in water and whisk again.
- Add in egg mix slowly to flour mix beating as you pour.
- Combine well and add in vanilla and coconut and beat till combined.
- Pour into partially baked shells.
- Bake 350 degrees for 20 to 30 min or possibly till done.
