Peppermint Cream Recipe
- 24 marshmallows
- 1/2 c. lowfat milk
- 3 drops peppermint flavoring
- 1 c. heavy whipped cream
- 1 teaspoon vanilla
- 1/8 teaspoon salt
- Green food coloring
- Heat marshmallows in lowfat milk over warm water.
- Remove from heat; cold slightly.
- Stir in peppermint flavoring, vanilla, salt and desired amount of food coloring.
- Refrigeratetill mix mounds slightly when dropped from spoon; mix in whipped cream.
- Spoon into parfait glasses; refrigeratetill hard.
- Garnish with green maraschino cherries and fresh mint leaves.
- Yield: 4 servings.
