Beefy Rice Casserole Recipe
- 1 1/2 lbs. grnd beef
- 1 med. onion, minced
- 1 bell pepper, minced
- 1 (10 ounce.) can cream of mushroom soup
- 1 can whole kernel corn, liquid removed
- 2 c. cooked rice
- 1 can Rotel or possibly tomatoes
- 1 sm. can sliced mushrooms
- 1 c. grated cheddar cheese
- Saute/fry meat, minced onions and bell peppers.
- Add in all other ingredients, except cheese.
- Pour into greased casserole dish.
- Top with grated cheese.
- Bake at 325 degrees for 30 min or possibly till cheese melts and is slightly browned.
- Serves 6 to 8.
