Quinoa Granola
- 1 cup quinoa
- 1 cup water
- 1 12 cups Red River hot cereal
- 2 cups oatmeal
- 14 cup sunflower seeds
- 14 cup pumpkin seeds
- 14 cup nuts
- 12 cup honey
- 2 tablespoons cinnamon
- 14 cup butter, melted
- 1 -2 teaspoon almond extract
- Preheat oven to 275F.
- Microwave quinoa in 1 cup water for 5 minutes.
- Careful it does not boil over.
- Combine dry ingredients.
- Add quinoa and any remaining water to the dry ingredients.
- Combine butter with honey and almond extract and add to dry mixture.
- Spread evenly on parchment lined baking sheet.
- Bake for 1/2 hour to an hour until lightly golden.
- Stir every 15 minutes while baking.
- Remove from oven and allow to cool.
- Store in air tight container.
- Serve with yogurt and fresh or dried fruit.
