South African Bobotie
- 2 pounds, 3-13 ounces, weight Minced/ground Beef
- 1 whole Onion, Chopped
- 1/2 cups Raisins
- 1/2 cups Almond Slivers
- 2 Tablespoons Fruit Chutney (I Recommend Mrs. Balls)
- 2 Tablespoons Apricot Jam
- 2 Tablespoons Lemon Juice
- 2 teaspoons Curry Powder
- 1 teaspoon Turmeric
- 2 teaspoons Salt
- 1 slice Sandwich Bread
- 1 cup Milk, Divided Use
- 2 teaspoons Oil
- 3 whole Eggs
- 4 whole Bay Leaves
- Bobotie is pronounced Buh-Boo-uh-Tea
- In a bowl, throw together the beef, chopped onion, raisins, almonds, chutney, jam, lemon juice, curry powder, turmeric and salt.
- Soak the bread in 1/2 cup of milk.
- Once soaked, squeeze the excess milk out of the bread and add the bread to the mixture.
- Blend well with hands to mix ingredients together.
- Pour 2 teaspoons of oil into a pan and add the meat mixture.
- Brown over medium heat and then transfer the mixture to a greased casserole dish.
- Pack firmly into the casserole dish.
- Mix together the eggs, remaining 1/2 cup of milk and pour over the top of the meat mixture.
- The egg mixture should form a layer on top of the meat.
- Place the bay leaves on top of the egg mixture and bake in the oven at 350F until set about 50 minutes.
- Serve with a salad and fresh dinner rolls or sourdough bread.
