Pumpkin Chips

  1. Using a vegetable peeler, cut the pumpkin into very thin slices.
  2. Pour oil to depth of 4 inches into a dutch oven (or a fryer if you wish) Heat to 375 degrees.
  3. Fry slices in batches about 3 mins or until crisp.
  4. Drain and sprinkle with salt, if desired.
