Pumpkin Chips
- 1 lb fresh pumpkin, peeled and seeded
- peanut oil (or any other kind)
- salt (optional)
- Using a vegetable peeler, cut the pumpkin into very thin slices.
- Pour oil to depth of 4 inches into a dutch oven (or a fryer if you wish) Heat to 375 degrees.
- Fry slices in batches about 3 mins or until crisp.
- Drain and sprinkle with salt, if desired.
