Banana Ice Cream (Jamaican) Recipe
- 2 c. whole lowfat milk
- 1 Tbsp. custard pwdr
- 2 x egg yolks
- 1/2 c. sweetened condensed lowfat milk
- 3/4 c. evaporated lowfat milk
- 3 x bananas pureed
- Mix custard pwdr to a paste with a little of the lowfat milk.
- Bring remainder of lowfat milk to boil and stir in paste and beaten egg yolks.
- Cook over low fire for 3 min.
- Stir till cold, then fold in condensed and evaporated lowfat milk and banana puree.
- Set to freeze.
- When very hard pack in container lined with wax paper; leave edge to overhang.
- Cover.
- Store in freezer.
- Yield: 1 qt
- NOTES :* original recipe called for cow's lowfat milk
