Oxtail Stew

  1. Put all of the ingredients in a 10 to 12-quart pot except for the beans.
  2. Fill with enough water to cover everything.
  3. Bring to a boil, then reduce heat to medium or medium-low and cook for 2 hours or until tender.
  4. Add the beans and stir.
  5. Thicken with cornstarch, if necessary.
