Mushroom Soup (sour)

  1. Wash mushrooms and cook in water until tender.
  2. Strain, reserving water.
  3. Chop mushrooms.
  4. Add sauerkraut juice, salt, and pepper to water (to taste).
  5. Return to a boil.
  6. Brown flour in butter until light brown.
  7. Add onion and saute until brown.
  8. Add 1/4 cup water and bring to a boil.
  9. Strain and add to mushroom water along with the mushrooms.
  10. Simmer until everything is at serving temperature.
  11. Serve with Bobalky.
