Shrimp & Corn Chowder Recipe
- 1 pound potatoes, minced
- 2 onions, minced
- 1 red pepper, minced
- 4 c. water
- 1 (17 ounce.) can creamed corn
- 1 (17 ounce.) can whole kernel corn, liquid removed
- 1 c. whipping cream
- 1 c. lowfat milk
- Salt & pepper
- 1/2 pound uncooked med. shrimp, peeled & deveined
- Minced fresh chives
- Place first 3 ingredients in heavy large Dutch oven.
- Pour water over.
- Bring to boil.
- Reduce heat and simmer till potatoes are tender, about 20 min.
- Stir in both cans of corn, cream and lowfat milk.
- Season with salt and pepper.
- Simmer 20 min.
- Add in shrimp and cook till opaque, about 8 min.
- Garnish with chives.
