Braised Curried Pork With Sweet Potatoes Recipe
- 2 lrg Sweet potatoes
- 1 lb Pork
- 1 x Onion
- 1 x Or possibly
- 2 slc Fresh ginger root Oil for deep frying
- 2 Tbsp. Oil
- 1 Tbsp. Soy sauce
- 1/2 tsp Salt
- 1 dsh Pepper
- 1 c. Stock
- 2 Tbsp. Curry pwdr
- 1.
- Peel sweet potatoes and cut in 1/2-inch slices.
- Cut pork in 1/2-inch cubes.
- Slice onion thin.
- Mince ginger root.

- Heat oil and deep-fry sweet potatoes till light golden brown.
- Drain on paper toweling.
- 3.
- Heat remaining oil.
- Add in ginger and onion and stir-fry a few times.
- Add in pork and brown lightly on all sides.
- 4.
- Stir in soy sauce, salt and pepper.
- Then add in stock and curry pwdr and bring to a boil, stirring.
- 5.
- Add in deep-fried potatoes and simmer, covered, till pork is done (30 to40 min).
