Lima Beans in Sour CreamA Tasty Way to Prepare Limas.

  1. Combine the lima beans and water in a Dutch oven.
  2. Bring to a boil over high, then reduce the heat to medium and gently boil until slightly tender, about 1 hour.
  3. Meanwhile saute the onion and pimiento in the oil in a medium nonstick skillet over medium-high heat until the onion has browned, about 3 minutes.
  4. Drain the beans and transfer to a large bowl.
  5. Stir in the onion, pimiento mixture, and the sour cream.
  6. Salt and pepper to taste.
