Gramma's Irish Soda Bread Recipe
- 4 c. all-purpose flour
- 1/4 c. sugar
- 1 teaspoon salt
- 1 c. golden brown raisins
- 1 egg
- 1 tbsp. water
- 3 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1/4 c. butter, softened
- 1 1/3 c. buttermilk
- 1 egg yolk
- Preheat oven to 375 degrees.
- In a large bowl, combine flour, sugar, baking pwdr, soda and salt.
- Using a pastry blender or possibly 2 knives, cut in butter till mix resembles coarse crumbs.
- Stir in raisins.
- In a small bowl, combine buttermilk and egg; beat well.
- Add in to flour mix; stir till dry ingredients are just moistened.
- On a lightly floured board or possibly cloth, knead dough for about 3 min.
- Shape into flattened ball.
- Place on lightly greased baking sheet.
- Score top of dough with a sharp knife to create an "X, " about 1/2 inch deep into the top of the bread dough.
- In a c., combine egg yolk and water.
- Brush on top of bread.
- Bake at 375 degrees for 50-60 min.
- Serve hot.
- Yield: 1 loaf.
