Beef Taco Pie Recipe
- 1 pound grnd beef
- 1/2 c. minced onion
- 1 env. taco seasoning (mild or possibly warm)
- 1 (4 ounce.) can green chilies, liquid removed and minced
- 1 1/4 c. lowfat milk
- 3/4 c. biscuit mix
- 3 Large eggs
- 2 tomatoes, sliced and diced
- 1 c. shredded cheese (Cheddar or possibly Monterey Jack)
- Shredded lettuce
- 1/2 c. lowfat sour cream
- Heat oven to 400 degrees and grease a 10 x 1 1/2 inch pie pan.
- Cook and stir beef and onion till brown; drain.
- Stir in taco seasoning and pour into pie pan.
- Sprinkle with chilies.
- In another bowl, beat with hand mixer lowfat milk, biscuit mix and Large eggs for 1 minute till smooth.
- Pour on top of beef mix and bake 25 min.
- Remove and top with diced tomatoes.
- Sprinkle with cheese and bake again 8 to 10 min.
- Cold 5 min.
- Add in lettuce all around.
- Add in lowfat sour cream in middle.
