Cola Braised Pork Stew
- 1 tablespoon oil
- 2 lbs country-style boneless pork ribs, excess fat trimmed, cut into 1 1/2 to 2 inch cubes
- 2 cups cola (do not use diet)
- 6 garlic cloves, minced
- 3 tablespoons soy sauce
- 2 tablespoons chopped peeled ginger
- 1 bunch green onion, chopped
- 1 12 cups sliced mushrooms
- cooked brown rice or cooked white rice, to serve stew over
- Heat oil in large pot over high heat.
- Add half of pork; saute until brown.
- Transfer pork to bowl.
- Repeat with remaining pork.
- Return pork to pot.
- Turn off heat and slowly add cola into pot.
- Bring to a boil.
- Reduce heat to med-low, cover and simmer 30 minute.
- Add garlic, soy sauce, ginger, mushrooms and half of the onions.
- Cook and simmer until pork is tender, about 40 minutes.
- Uncover and simmer until sauce is slightly thickened.
- Season with salt and pepper; transfer to bowl.
- Sprinkle with remaining onions.
- Serve over rice.
