Brown Rice Pudding Recipe for the Crockpot
- 1 1/2 cup brown rice long-grain, basmati
- 14 ounces milk, sweetened condensed
- 4 cups coconut milk unsweetened
- 2 teaspoons cinnamon ground
- 1/2 cup cranberries, dried sweetened or raisins, seedless
- Spray the inside of the crockpot with non-stick cooking spray.
- Rinse the rice under cold running water until the water is no longer cloudy.
- In a large bowl mix all the ingredients together then pour into the crockpot.
- Cover and cook on HIGH for 3 to 5 hours or LOW for 5 to 7 hours.
- Cooking time will depend on the temperature of your slow cooker and upon the kind of rice you used.
- Check the pudding at the shortest cooking time and test to see if it's done.
