Heartbeet Vegetable Burgers
- 2 1/2 cooked, mashed sweet potatoes
- 1 1/2 cups quinoa, cooked and cooled
- 3/4 cup trail mix
- 1 large golden beet, grated
- 1 red beet, grated
- 1/2 cup whole wheat flour
- 1/2 cup whole wheat bread crumbs
- 1/3 cup olive oil
- 1/2 red onion, minced
- 5 tablespoons parsley, minced
- 3 tablespoons tamari
- 1 tablespoon sea salt
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Combine sweet potatoes, quinoa, trail mix, golden beet, red beet, flour, bread crumbs, oil, onion, parsley, tamari, sea salt, garlic, and red pepper flakes in a large bowl. Mix by hand until burger mix is thoroughly combined.
- Divide burger mix into 10 portions; press each one firmly into a patty. Place on the prepared baking sheet.
- Bake in the preheated oven until golden brown, about 20 minutes.
