Eve'S Chicken
- 6 boned double chicken breasts
- 2 Tbsp. Marsala wine
- 3/4 to 1 tsp. tomato paste
- 2 Tbsp. Parmesan cheese
- 1/2 c. chicken bouillon
- 1 1/2 c. sour cream
- 2 Tbsp. currant jelly
- salt and pepper
- Shake up chicken in seasoned flour and brown in butter. Sprinkle Marsala over the chicken in the pan and remove the chicken from the pan.
- Add tomato paste to the pan with a bit more flour, then add the bouillon and stir until the mixture thickens. Add sour cream with a whisk and stir until smooth.
- Then add currant jelly and salt and pepper (the amount of these will depend upon how highly seasoned your bouillon was) and 1 tablespoon of cheese.
- Replace the chicken in the mixture and cook for 20 to 30 minutes over moderate heat.
- Sprinkle with remaining tablespoon of cheese and brown under broiler.
- If you cook this in the oven, instead of on top of the stove, do so at 350u0b0 for about 45 minutes.
- It is most convenient of all to cook it in an electric skillet.
- This recipe is for 6.
