Boysenberry Meringue Bars Recipe
- 1/2 c. packed light brown sugar (I would use less next time
- 1/3 c. nonfat margarine Fleischman's spread
- 1 tsp Vanilla
- 1 c. Rolled Oats
- 3/4 c. Flour unbleached
- 1/4 c. Whole-Wheat Flour
- 1/2 tsp Baking Soda
- 10 ounce Boysenberry Jam all fruit
- 3 x Egg Whites at room temp
- 1/2 tsp Coconut Extract
- 1 Tbsp. Coconut Flakes
- NOTE: I found which these are very sweet - so I would use less sugar next time.
- I used Boysenberry jam and it was delicious!
- Preheat the oven to 350 deg F. Coat a 9" square baking dish with nonstick
- spray.
- In a large bowl, use an electric mixer set at high speed to beat 1/3 C of the sugar, the spread and vanilla till fluffy.
- Stir in the oats, flours and baking soda till well combined.
- Press the mix proportionately into the bottom of the dish.
- Bake till lightly browned, 10 - 15 minutes.
- Coat the top of the crust with the all-fruit spread.
- In a small clean bowl, use an electric mixer with clean beaters to beat the egg whites at high speed till soft peaks begin to create.
- Add in the remaining 1 1/2 Tablespoons of sugar and beat till soft peaks form.
- Mix in the coconut extract.
- Spread or possibly pipe the egg white mix over the fruit spread; sprinkle with coconut.
- Bake till the top is golden, about 10 minutes.
- Cold completely on a wire rack.
- Cut into bars.
- Makes 18 bars.
