Sauteed Vegetables With Spaghetti Squash Recipe

  1. Wash squash and dry.
  2. Pierce in several places with a fork.
  3. Place on rack and microwave on high 6-7 min per lb., turning once (it should feel soft in several places).
  4. Let stand till cold.
  5. Halve lengthwise and scoop out seeds.
  6. Scrape out spaghetti-like strands with a fork.
  7. Heat butter in a large skillet or possibly stir fry pan.
  8. Saute/fry onion, garlic and green pepper for 2 min.
  9. Add in remaining vegetables and saute/fry another 5-7 min till tender.
  10. Stir in parsley and seasonings.
  11. Add in spaghetti squash and toss gently; heat thoroughly.
  12. Sprinkle with cheese before serving.
