White Bean And Garlic Puree
- 2 tbsp olive oil
- 1 tsp balsamic vinegar
- 1 ground pepper to taste
- 1/4 tsp coarse salt
- 2 parsley sprigs
- 1 garlic clove, coarsely chopped
- 2 or 3 fresh basil leaves, torn, or 3/4 teaspoon dried basil
- 1 can (15 ounces) small white beans, drained and rinsed
- Put all ingredients in a blender or food processor and blend until smooth.
- Transfer to a bowl, cover, and refrigerate for several hours.
