Pulled Pork Roast with Sweet Sauerkraut
- 1 whole (5 To 6 Lb. Size) Pork Roast (Butt)
- 1/2 cups Water
- 16 ounces, fluid Low Sodium Vegetable Stock
- 1 Tablespoon Black Pepper
- 1- 1/2 cup Light Or Brown Sugar
- 1/4 cups Granulated Sugar
- 16 ounces, weight Refrigerated Sauerkraut
- In a slow cooker (or crockpot), add pork roast, water, vegetable stock, and black pepper.
- In a mixing bowl, add sugars and mix together.
- Add sauerkraut (and the juice from the jar), mix well to dissolve the sugar, and add this into the crockpot with the pork roast.
- Put the lid on.
- Cook on medium heat for 2 hours.
- Remove pork roast onto a large platter or dish.
- Use 2 forks and shred pork.
- Transfer sauerkraut and juices to a bowl to serve alongside shredded pulled pork.
- Pork will be tender and delicious.
- Use the leftover pork for sandwiches!
