Mackerel with kiwi salsa recipe
- 4 mackerel fillets
- 1 splash coconut oil
- 0.5 tsp smoked paprika
- 3 kiwi fruit, diced
- 0.5 red onion, finely chopped
- 1 handful fresh coriander, finely chopped
- 0.5 tsp chilli flakes
- 1 tbsp olive oil
- 2 tbsp toasted hazelnuts, chopped
- Brush the mackerel fillets with a little coconut oil then sprinkle with the smoked paprika and some seasoning.
- Put the fillets on a preheated barbecue, skin-side down, and cook for 2 minutes before flipping over and cooking for another minute or so.
- To make the salsa, combine the kiwi fruit with the red onion, coriander, chilli flakes and olive oil.
- Serve with the mackerel and garnish with the toasted hazelnuts.
