Daube of Beef
- 5 each shallots thinly sliced
- 4 each garlic cloves minced
- 2 medium carrots sliced into 1/4 inch pieces
- 13 cup ham baked, chopped
- 1 slice orange zest
- 1 each bay leaves
- 3 pounds beef chuck sliced into 1 1/2 inch cubes
- 1/4 cup flour, all-purpose
- 1/4 teaspoon black peppercorns whole
- 1/4 teaspoon thyme dry
- 18 teaspoon cloves ground
- 1/2 teaspoon sage dry
- 2 tablespoons balsamic vinegar
- 3/4 cup white wine dry
- 1/4 cup brandy
- 2 tablespoons flour, all-purpose
- 2 tablespoons margarine
- 1 x salt
- 1 x parsley leaves chopped
- In slow cooker, combine shallots, garlic, carrots, ham, orange peel, and bay leaf.
- Coat beef cubes with flour, add to cooker.
- Sprinkle with peppercorns, thyme, cloves, and sage.
- Drizzle with vinegar; pour in wine and brandy.
- Cover.
- cook LOW until beef is very tender.
- Remove and discard bay leaf and orange peel, then blend in flour and butter (Blend together).
- Increase cooker heat to HIGH, cover and cook, stirring 2 to 3 times, until sauce is thickened, about 20 minutes.
- Season to taste and sprinkle with parsley.
